Pimento Cheese Sliders (American South)
Flavourful sliders are topped with delicious old fashioned pimento cheese. Pimento cheese in the South is often called Carolina caviar.
2 lbs lean ground beef
1 tsp. sea salt
1 tsp. black pepper, freshly ground
1 small onion, minced
To Serve:
green leaf lettuce
1 (15 oz) pkg slider buns
1½ cups prepared pimento cheese
fried eggs
onions
pickles
tomatoes
Heat a grill pan over medium-high heat.
Gently combine the beef, salt, pepper and onions in a large bowl. Shape the mixture into 12 patties. Grill the patties on the pan until desired degree of doneness, about 5 minutes per side.
Place some lettuce and patties on the bottom halves of the buns. Spread 2 Tbsp. pimiento cheese over each patty. Add some fried eggs, onions, pickles and tomatoes. Top with the bun tops.
Makes 10 servings.
