Potatoes with Garlic and Rosemary (Air Fryer)
Garlic roasted rosemary baby potatoes are a savoury and fragrant side dish or appetizer made even easier by cooking them in the air fryer. Yukon potatoes are oiled and then seasoned with garlic and rosemary and then baked to crispy perfection on the outside while becoming light and fluffy on the inside.
2½ lbs Yukon potatoes, cut into 1" pieces
1 Tbsp. extra-virgin olive oil
2 Tbsp. fresh rosemary, chopped
1 Tbsp. garlic powder
1 tsp. kosher salt
½ tsp. black pepper, freshly cracked
In a large mixing bowl, add all ingredients and mix well to combine.
Add potatoes to your air fryer basket, close the drawer and set to 400°F (200°C) for 30 minutes. About halfway through, pause and remove basket. Shake well to mix up the potatoes (it's best to do this over the sink).
Place basket back in the air fryer and resume cooking. Once done, sprinkle with more rosemary and salt for serving.
Make sure to open the drawer of the air fryer once done or they can steam in there if left too long.
