Smoked Salmon Blinis (Parmesan and Honey Mustard Cream Cheese)

smokedsalmonblinis3Homemade smoked salmon blinis with Parmesan cheese and Honey Mustard Cream Cheese. These simple appetizers are both beautiful and delicious. Blinis are Russian pancakes that are traditionally made from wheat or buckwheat. They were made using yeasted batter which means that it needed to rise before being baked in an oven. These days it's common to cook blinis on stove top and the batter doesn't require yeast. There are many varieties to blinis, these delicious blinis are so easy to make. I'm using self-rising flour for convenience. I'm also adding some grated Parmesan cheese to give an extra flavour boost to these yummy little beauties. I like to make my blinis small by spooning 1 Tbsp. of batter of the pan. That way I have them all more or less the same size and they will be perfect to serve as appetizers.

Parmesan Blinis:
½ cup self rising flour (75 g)
⅛ tsp. sea salt (1 g)
⅛ tsp. baking powder (1 g)
½ cup milk, room temperature (125 mL)
1 egg , room temperature
1 Tbsp. unsalted butter, melted (15 mL)
¼ cup Parmesan cheese, freshly grated (15 g)
some butter, for the pan
slices smoked salmon, as needed
fresh chives, for decoration

Honey Mustard Cream Cheese:
½ cup cream cheese, room temperature (125 g)
1 Tbsp. mustard (15 mL)
1 Tbsp. pure honey (15 mL)
½ tsp. dried dill

Make the Parmesan Blinis:
In a bowl, add in the self rising flour, salt and baking powder. Whisk to combine and set aside.

In another bowl, add in the milk and egg. Whisk to combine and then add in the melted butter. Give it a few more whisks to combine everything.

Pour into previously prepared flour mixture. Mix everything just until well combined. Add Parmesan and give it a last mix to combine everything.

Heat a pan with some butter on medium heat. Put 1 Tbsp. of blini batter onto the pan, leave some space in between them. Cook until you can see bubbles around the edges. Then flip and continue cooking for another minute until the blinis are fully cooked. Transfer to a plate and set aside.

Make the Honey Mustard Cream Cheese:
In a bowl, add in cream cheese, mustard, honey and dried dill. Mix until well combined.

Assemble:
Place 1 blini on a plate. Put a piece of smoked salmon on top and then pipe some honey mustard cream cheese on top of the salmon. Finish it off by placing 2 crossed chives on top. Do the same to the rest of the blinis.
