Wedge Salad Skewers
These savoury and visually stunning Wedge Salad Skewers are easy to prepare and are certain to impress your guests. I don’t know about you, but I love a wedge salad. Crispy iceberg lettuce topped with bacon, tomatoes and drizzles of blue cheese, what’s not to love? It's a definite classic and one of my personal favourites.
1 head iceberg lettuce
10 slices bacon, cooked
20 grape tomatoes
1 cup blue cheese dressing
⅓ cup blue cheese, crumbled
black pepper, freshly ground
Begin by cooking your bacon. I recommend this baking method but feel free to cook it the way you like best. Just be sure to not overcook the bacon as it still needs to be flexible. Once cooked and cooled, slice in half lengthwise.
Next, chop your iceberg lettuce into 20 bite-size chunks.
Thread a wedge of iceberg lettuce, a half-strip of cooked bacon and a grape tomato onto a six” cocktail pick.
Repeat with remaining ingredients.
Arrange on a large platter. Drizzle with blue cheese dressing.
Finally, sprinkle with crumbled blue cheese and freshly cracked pepper.
Makes 10 servings.
Cook's Notes:
Variations:
- I love these skewers just as they are, but since everyone’s taste preferences differ, feel free to add your personal flair and favourite ingredients to the skewers.
- Consider incorporating different types of lettuce or salad greens for added texture and flavour. You can also play around with the dressing using a creamy ranch or balsamic vinaigrette, for example.
- Another way to tailor your skewers is by swapping out the bacon for a vegetarian option or using a different type of cheese. Feta would provide a tangy twist, while shredded cheddar or Monterey Jack would offer a milder flavour.
- Remember to keep in mind any dietary restrictions or preferences of your guests when customizing your skewers. With a few simple changes, you can create a veggie-only version.
Frequently Asked Questions:
- Can I make these wedge salad skewers ahead of time? Yes, you sure can. However, I recommend waiting to add the dressing until just before serving.
- Can I substitute something in place of the blue cheese dressing? Absolutely. If you’re not a fan of blue cheese, you can substitute it with ranch dressing or any other creamy dressing of your choice.
- Can I use different veggies on the skewers? Of course. The beauty of skewers is that you can customize them to your liking. Feel free to add or swap out vegetables such as cucumber, roasted red pepper, red onion, etc.
