Spinach and Feta Crisps (Mediterranean Almond Flour)

mediterranean-spinachfetacheesecrisps6Crispy, savoury Mediterranean spinach and feta cheese crisps are a delicious and healthy snack or appetizer. Perfect for any occasion, they combine fresh spinach with tangy feta for a flavourful bite.

2 cups fresh spinach, finely chopped
1 cup feta cheese, crumbled
½ cup almond flour
1 large egg
1 Tbsp. extra-virgin olive oil
1 tsp. garlic powder
½ tsp. sea salt
¼ tsp. black pepper, freshly ground

Preheat your oven to 375°F (190°C/170°C fan, Gas Mark 5) and line a baking sheet with parchment paper.

In a large bowl, mix the spinach, feta, almond flour, egg, olive oil, garlic powder, salt and pepper.

Scoop Tbsp. portions of the mixture onto the baking sheet, flattening them slightly.

Bake for 15-18 minutes until golden and crispy.

Let cool for 5 minutes before serving.

Makes 12 crisps.

  • Store leftovers in an airtight container for up to 3 days.
  • Add a pinch of red pepper flakes for extra spice.
  • For a dairy-free option, substitute feta with vegan cheese.
