Causeway Cocktail (Nova Scotia)

1 oz lemon juice, freshly squeezed
1.5 oz Smuggler's Cove rum
2 tsp. Galloping Cows ginger-peach juice
ginger beer
fresh mint for garnish

Honey syrup:  Add 1 part honey, 1 part brown sugar and 2 parts water to a pot, bring to a boil, let cool, bottle. Does not need to be strained.

Causeway Cocktail:  Combine honey syrup, lemon juice, rum and ginger peach juice in a shaker with ice, shake hard and double strain into highball glass filled with ice.

Top with ginger beer, garnish with a sprig of mint.
