Martini (Gibson)

gibsonThe Martini‘s savoury second cousin, the Gibson, uses a pickled cocktail onion in place of the typical briny olive to add an umami undertone to the classic cocktail. The Gibson is believed to have been created by San Francisco businessman Walter D.K. Gibson in the late 1800s, who thought that eating onions prevented colds, hence the addition of the mini allium.

2½ oz London dry gin or Blue Goose vodka (75 mL)
½ oz dry vermouth (15 mL)

Garnish:
1 pickled onion

Add the ingredients into a mixing glass with ice and stir. Strain into a chilled cocktail glass.

Garnish with the pickled onion.

Makes 1 serving.
