Hot Milk and Rum (Colombian Candil or Caspiroleta)

Most Colombians swear by the restorative powers of a good, hot cup of candil; if you have a cold or feel one coming on, this is the drink of choice. Perfect for hosting a novena, in lieu of a hot toddy, or whenever the mood strikes and the thermometer dips.

2 cups milk
sugar of choice, to taste
2 eggs, at room temperature
2 sticks cinnamon
1 splash pure vanilla extract
2-4 oz rum or aguaardiente (optional)

Add the milk to a tall sided saucepan and heat over medium heat.

When milk is warm (but not boiling) froth with an immersion blender or molinillo.

Slowly add the two eggs to the warmed (not scalding hot) milk while continuing to froth the mixture.

Grate cinnamon sticks over mixture and add vanilla and continue beating until the mixture is creamy, hot, and smooth.

Add a shot of your preferred spirit, serve warm.
