Milk and Papaya Drink (Dominican)
A refreshing tropical fruit smoothie.
1 papaya
6 Tbsp. coconut milk, or milk
5 Tbsp. lime juice, freshly squeezed
½ tsp. lime rind, grated
4 Tbsp. sugar
1 tsp. pure vanilla extract
½ cup ice, finely crushed
Peel the papaya, cut in half and remove the black seeds, chop fruit coarsely.
Combine the papaya, coconut milk, lime juice and rid, sugar, vanilla and ice in an electric mixer and blend at high speed until mixture is smooth and thick.
Serve in chilled tumblers.
