Plum Wine

plumwineNothing could be simpler than combining ripe produce with the alcohol of your choice to reap the rewards months later. The technique also works with nonalcoholic liquids like honey or vinegar.

2 lbs small red plums (the smaller the better)
2 cups sugar
1 bottle vodka or other clear flavourless spirit (750 mL)

Combine plums and sugar in a large jar or crock and add vodka. Stir to dissolve sugar and tightly cover. Store in a cool, dark place at least 3 months before using. Plum wine should taste floral and almost Sherry-like, with notes of caramel and raisins.

Make Ahead: Plum wine can be made 1 year ahead. Chill.

Makes about 3ΒΌ cups.
