Sweet Potato Biscuits

Sweet potato biscuits are delicious as a side dish or slathered with honey butter for breakfast.
2 cups sweet potatoes, mashed, kept hot
½ cup olive oil
¾ cup sugar
3 cups all-purpose flour, unbleached
4 tsp. baking powder
½ tsp. sea salt
Preheat oven to 350°F (180°C/160°C fan, Gas Mark 4).
Mix together sweet potatoes, oil, and sugar. Sift together flour, baking soda, and sea salt and then add to potato mix. Mix well. Roll out on floured surface. Cut out with biscuit cutter.
Bake for approximately 20-25 minutes or until bottom of biscuits are brown.
