Chicken and Vegetables with Dumplings (Slow-Cooker Bisquick)
Make delicious homemade dumplings that simmer over a savoury combination of chicken and vegetables. Mmm.
2½-3 lbs chicken thighs, boneless, skinless
1 lb small red potatoes (~ 2½” diameter)
1 medium onion, coarsely chopped (¾ cup)
2 cups baby-cut carrots
5¼ cups chicken broth (from two 32 oz cartons)
2 cups Bisquick
½ cup water
2 tsp. dried parsley flakes
Place chicken, potatoes, onion and carrots in 6 qt slow cooker. Add broth.
Cover and cook on low heat setting 9-10 hours.
Increase heat setting to high. Stir together Bisquick mix, water and parsley in medium bowl. Drop dough by rounded Tbsp. fuls onto hot chicken mixture.
Cover and cook 45-50 minutes or until dumplings are dry in center.
Makes 5 servings.
Cook's Notes:
- Serve this stew-type meal in a bowl with the broth.
- Add a tossed green salad garnished with grapefruit sections and drizzled with poppy seed dressing to this country-style dinner.
