Butter Biscuits (Bisquick)

This easy homemade butter biscuit recipe is made from only three ingredients: butter, milk and our favourite kitchen shortcut, Bisquick mix. With just 10 minutes of prep time and less than 10 minutes to bake, this recipe is so simple that you might want to make a second batch of these classic butter biscuits to serve at the dinner table. Plus, if you’re looking to save even more time, you can skip the kneading step and make simple drop biscuits instead.

⅓ cup butter, firm
2½ cups Bisquick
⅔ cup milk
butter, melted

Preheat an oven to 450°F (230°C/210°C fan, Gas Mark 8).

Cut firm butter into ¼” pieces. Toss Bisquick mix and butter pieces with fork until coated. Add milk; stir just until milk is absorbed (do not over stir).

Turn dough onto surface dusted with Bisquick mix. Knead 5 times. Pat to ½” thickness. Cut with 3” cutter. Place on ungreased cookie sheet with sides touching for soft sides or 2” apart for crispy sides.

Bake about 9 minutes or until golden brown. Brush with butter, melted.

Cook's Notes:

  • When preparing the biscuits, be careful not to overwork the dough. Biscuits can lose some of that light and airy texture if the dough is kneaded too much. Work the biscuit dough just enough so the dough is coated in flour and no longer sticky.
  • Try adding one tsp. of dried herbs such as rosemary, basil or thyme in your dough for a savoury twist on this classic biscuit.
  • This butter biscuit recipe can also be used to make drop biscuits. Simply decrease the Bisquick mix to 2¼ cups, then skip the kneading step. Rather than rolling and cutting the dough, drop the dough by the spoonful onto an ungreased cookie sheet, placing the biscuits two” apart. Because the dough will be wetter, bake for 10 minutes or until golden brown.
  • While we love biscuits for breakfast, we’ll happily eat them any time of day. To enjoy biscuits for dinner, use them as a substitute for regular dinner rolls, or combine them with chicken and veggies, like in this chicken and biscuits recipe. It’s an easy solution to weeknight supper as it can be made in just half an hour.
