Cheddar Cheese Crackers with Sesame

sesamecheesecrackersThese tasty homemade crackers are irresistible. Enjoy them with soups, or munch on them all by themselves. Cayenne pepper adds a bit of a kick.

1 cup all-purpose flour, unbleached
½ tsp. sea salt
⅛ to ¼ tsp. ground cayenne pepper
6 Tbsp. butter, cold
1 cup cheddar cheese, freshly shredded
¼ cup sesame seeds, toasted
6-7½ tsp. water, ice cold, divided
½ tsp. soy sauce

In a small bowl, whisk flour, salt and cayenne; cut in butter until mixture resembles coarse crumbs. Stir in cheese and sesame seeds. Combine 3 tsp. water and the soy sauce; stir into dry ingredients with a fork. Stir in enough remaining water until dough forms a ball. Wrap and refrigerate until firm, 1 hour.

Preheat an oven to 400°F (200°C/180°C fan, Gas Mark 6).

On a floured surface, roll dough into a 14x11” rectangle. Cut into 2x1” strips. Place on lightly greased baking sheets. Bake until golden brown, 12-15 minutes. Remove to wire racks to cool.

Makes 77 crackers.
