Mushroom Crêpes with White Wine Sauce
1 recipe Dinner Crêpes
1 tsp. olive oil
4 cups mushrooms, sliced (about 12 oz)
½ cup shallots, sliced
¼ cup white wine
1 tsp. nutmeg, grated
1 Tbsp. Parmesan cheese, grated
Heat oil in a large skillet over medium-high heat, sauté mushrooms and green onions for 3 minutes (mixture will be dry at first, then mushrooms will begin to exude moisture.) Add wine and nutmeg. Continue to cook until liquid evaporates, about 5 minutes. Remove from heat, sprinkle with ½ Tbsp. Parmesan cheese.
Preheat broiler.
Spoon several Tbsp. of mushroom mixture into center of each crêpe, then roll tightly. Place in lightly oiled baking dish, sprinkle with remaining cheese and broil until light brown, about 2 minutes.
Makes 6 servings (12 crêpes).
