Rhubarb Bread
My Granny's favourite bread!
1-1/3 cups packed brown sugar
2/3 cup olive oil
1 egg, beaten
1 tsp. pure vanilla extract
1 cup buttermilk
2½ cups all-purpose flour, unbleached
¾ tsp. sea salt
1 tsp. baking soda
½ tsp. ground cinnamon
1½-2 cups rhubarb, diced in ¼" pieces
½ cup nuts, chopped (optional)
Preheat oven to 350°F. Greased two 8x4" loaf pans.
In a bowl, combine the sugar and oil; blend in egg, vanilla and milk. Combine flour, salt, cinnamon and baking soda; add to moist ingredients. Stir in rhubarb and nuts.
Transfer to two loaf pans.
Bake for about 45 minutes or until a toothpick inserted near the center comes out clean.
Cool for 10 minutes before removing from pans to wire racks.
Makes 2 loaves.
