Bacon and Potato Casserole with Green Onions (Mayonnaise)
Bacon Cheddar Mashed Potato Casserole is the perfect side dish for special holiday meals. Baked in a casserole dish, this loaded mashed potato casserole is topped with shredded cheddar cheese and plenty of bacon. Sprinkle with chives or green onions for a pop of fresh colour and flavour.
6 medium Yukon gold potatoes peeled and diced
1 cup cheddar cheese, shredded
⅔ cup mayonnaise
6 slices bacon, cooked and crumbled
1 Tbsp. garlic, minced
½ cup green onion, chopped
1 tsp. sea salt
1 tsp. black pepper, freshly ground
Preheat oven to 350°F (180°C/160°C fan, Gas Mark 4). Lightly grease a 9x13" casserole dish.
Mix all ingredients in a large bowl. Pour in casserole.
Bake for 1 hour or until cheese has melted and brown.
