Ground Beef and Macaroni Casserole (North Dakota Funeral Hotdish)

american-northdakota-beefmacaronicasseroleNorth Dakota Casserole (or Hotdish) is a good old-fashioned comfort food that can be made with basic ingredients you probably already have on hand. They actually call this ‘Funeral Hotdish’ in North Dakota since it can easily be made in large quantities.

1 lb lean ground beef
1 Tbsp. dried onion, minced
1 tsp. sea salt
1 tsp. black pepper, freshly ground
1 tsp. garlic powder
1 Tbsp. Worcestershire sauce
2 cups beef broth
8 oz macaroni, uncooked
1 (14.5 oz) can diced tomatoes
1 cup frozen white sweet corn
1 (10.75 oz) can Campbell’s tomato soup

Heat a large pan over medium high heat. Add in the beef and break it up. Add in the onion, salt, pepper and garlic powder. Brown for about 5 minutes.

Pour in 2½ cups of broth. Stir in the macaroni, tomatoes, corn and tomato soup.

Cover the pan and simmer the dish for about 15-20 minutes, until pasta is cooked through.

Stir. Scoop onto plates and serve.
