Ham and Green Bean Casserole

hamgreenbeancasseroleThis is a great way to use up any leftover ham you may have. You can also add sautéed mushrooms to this Ham and Green Bean Casserole.

1-1½ lbs fresh green beans
1 small onion, chopped
2 Tbsp. butter
½ lb ham, chopped
1 Tbsp. all-purpose flour, unbleached
3 Tbsp. butter
½ cup chicken broth
½ cup milk
¼ cup sour cream
¼ tsp. ground paprika
¼ tsp. sea salt
⅛ tsp. black pepper, freshly ground
1 cup cheese, freshly shredded

Preheat an oven to 375°F (190°C/170°C fan, Gas Mark 5).

Steam or boil the green beans. Drain and add to a 9x13" baking dish.

Sauté the onions in 2 Tbsp. butter. Add to the baking dish. Add the ham and mix everything together.

Make the Sauce:
Melt the 3 Tbsp. butter in a small saucepan over medium-low heat. When melted, whisk in the flour and continue whisking until smooth and bubbly. Slowly whisk in the chicken broth and milk. Bring to a gentle boil, whisking constantly, until the sauce thickens. Add the sour cream, paprika, salt and pepper. Mix together.

Assembly:
Pour the sauce over the ingredients in the baking dish. Mix to combine, then top with cheese.

Cover the dish with foil. Bake in a preheated oven for 15 minutes. Uncover the dish and bake another 15-20 minutes or until hot and bubbling.
