Turkey Divan

turkeydivanThis turkey divan is an easy and delicious casserole made with turkey, cheddar cheese, Parmesan cheese and broccoli. It's a nice way to use leftover turkey.

2 cans cream of chicken soup, undiluted
1 cup mayonnaise
¼ cup dry white wine
1 tsp. lemon juice, freshly squeezed
½ tsp. dried tarragon
¼ tsp. onion powder
¼ tsp. ground paprika
⅛ tsp. black pepper, freshly cracked
4 cups leftover turkey, diced or shredded
2 cups broccoli, cut into small pieces
¾ cup cheddar cheese, shredded, divided
1 cup Ritz crackers, crushed, or homemade breadcrumbs
1 Tbsp. butter, melted

Preheat oven to 350°F (180°C/160°C fan, Gas Mark 4) and lightly grease a 9x13" pan or any casserole dish you would use to make a family size casserole.

In a medium bowl combine cream of chicken soup, mayonnaise, white wine, lemon juice, curry powder, tarragon, onion powder, paprika and black pepper.

Add chicken, broccoli and ½ cup cheese and stir well. Transfer mixture to prepared baking dish.

In a small bowl, combine cracker crumbs, remaining cheese and melted butter. Sprinkle on top of casserole.

Place in oven and bake for 40 minutes.

If desired, serve with rice or egg noodles.

Makes 4 servings.


Cook's Notes: If you want the broccoli to be soft and not have any crunch, steam it until crisp-tender. If you are adding raw broccoli to the casserole, cut it into small pieces, especially the stems and it will have just a little crunch left when cooked. You could also use frozen broccoli that has been defrosted.
