Cranberry Chutney

cranberrychutney42 lbs cranberries
1 shallots, finely chopped
1 Tbsp. fresh ginger, minced
1 cup sugar
1 tsp. orange peel, freshly grated
1 orange, freshly squeezed

Place cranberries, shallot, orange zest and juice in a pot, add water, just enough to cover. Bring to a boil and simmer until a jam like consistency is achieved.

Remove from heat and cool.
