Cranberry Garlic Chutney
This cranberry chutney gets savory notes from garlic and ginger. Not only does it make a fine condiment for holiday turkey, it also makes a wonderful appetizer served with soft cheese such as brie or goat cheese.
2 tsp. fresh ginger, minced
1 Tbsp. olive oil
2 cloves garlic, minced
2 cups cranberries
10 Tbsp. sugar
½ cup orange juice
1 Tbsp. apple cider vinegar
coarse sea salt
pepper, freshly cracked
In a small saucepan, heat olive oil over low heat.
Cook ginger and garlic until softened, about 3 minutes.
Add cranberries, sugar, orange juice, cider vinegar.
Cook over medium heat until most of the berries have burst and mixture has thickened, about 8 minutes.
Season with coarse sea salt and pepper, freshly cracked.
Makes 1 cup.
