Fruit Chutney

fruitchutney4 large (2 cups) peaches, coarsely chopped
2 cups raisins (500 mL)
1½ cups brown sugar (375 mL)
2/3 cup lemon juice, freshly squeezed (160 mL)
½ cup onion, finely chopped (125 mL)
2/3 cup crystallized ginger, finely chopped (160 mL)
2 cloves garlic, finely chopped
1 tsp. sea salt (5 mL)
½ tsp. cinnamon (2.5 mL)

Mix all of the ingredients in a bowl. Microwave the chutney on high for 10-12 minutes, stirring after 5-6 minutes.

The chutney should be syrupy.

Chill and serve.
