Green Goddess Dip (Vegan)

greengoddesssauceNo mayonnaise or sour cream here. This egg and dairy-free version of the beloved herb-packed dip relies on avocado for its velvety texture. Serve with a party-ready Shrimp and Crudité Platter

1 avocado, chopped (1 cup)
1 tsp. lime zest, finely grated
2 Tbsp. lime juice, freshly squeezed
1 Tbsp. white wine vinegar
4 tsp. Dijon mustard
¼ cup extra-virgin olive oil
sea salt
black pepper, freshly ground
1 cup cilantro or parsley leaves, or a combination, packed

Purée avocado, lime zest and juice, vinegar, mustard, oil, ½ tsp. salt, ¼ tsp. pepper and 3 Tbsp. water in a food processor or blender until smooth. Pulse in herbs just to combine.

Transfer to an airtight container; press plastic wrap directly on surface. Refrigerate at least 2 hours and up to 1 day.

Makes 1½ cups.
