Dubliner Dip (Irish)

Dubliner cheese is an Irish specialty cheese from Kerry Gold. It is hard to pinpoint an exact description for it but let’s say it is like a slightly sweet cheddar cheese with a nuttiness like a Swiss cheese and it melts beautifully.

1½ cups Dubliner cheese, grated
1 cup plain yogurt
4 Tbsp. mayonnaise
2 tsp. horseradish sauce
1 tsp. black pepper, freshly ground

Mix together the cheese, yogurt, mayonnaise and horseradish sauce.

Add pepper to taste. Put into a small bowl and chill.

Surround with a selection from the following; cubed cheese, sticks of carrot, celery, mixed peppers, scallions or potato savouries.

Makes 2½ cups.
