Tahini Dip (Cypriot Tachinosalata)

cypriot-tachinosalataTachinosalata is a creamy white traditional Cypriot dip, made with tahini paste. It is a very versatile dip as it caters to many dietary requirements. The best thing about it though is that it is delicious.

1 cup Tahini Paste
6 cloves garlic, peeled and crushed
¼ cup water, cold
¼ cup lemon juice, freshly squeezed
1-2 Tbsp. extra-virgin olive oil
1 pinch sea salt

Stir the tahini and crushed garlic together.

Add water, lemon juice and olive oil a little at a time and mix well - you want it to be the consistency of cream - not too thick, but not too runny either.

Season with salt.

Makes 6 servings.
