Blackberry and Apple Compôte (Irish)
If you want the perfect topping for breakfast dishes and desserts, here's something special for you. Blackberry compote is so simple to make and tastes absolutely divine.
1 cup sugar (200 g)
cooking apples, peeled, cored and cut into matchsticks ¼" (6.5 mm) thick
1 cup fresh blackberries (150 g)
Bring 2 cups (475 mL) water to a boil over high heat in a medium saucepan. Stir in the sugar and cook, continuing to stir, for about 1 minute to make a syrup.
Reduce the heat to low and add the apples, making sure they are all submerged. Cook for 10-15 minutes or until the apples are very soft but have not broken up. Add the blackberries and continue cooking for 5-6 minutes more, or until the blackberries are very soft.
To serve, divide the fruit evenly between 4 bowls and spoon a little syrup over each serving.
Makes 4 servings.
