Blackberry and Apple Compôte (Irish)

irish-blackberryapplecompoteIf you want the perfect topping for breakfast dishes and desserts, here's something special for you. Blackberry compote is so simple to make and tastes absolutely divine.

1 cup sugar (200 g)
cooking apples, peeled, cored and cut into matchsticks ¼" (6.5 mm) thick
1 cup fresh blackberries (150 g)

Bring 2 cups (475 mL) water to a boil over high heat in a medium saucepan. Stir in the sugar and cook, continuing to stir, for about 1 minute to make a syrup.

Reduce the heat to low and add the apples, making sure they are all submerged. Cook for 10-15 minutes or until the apples are very soft but have not broken up. Add the blackberries and continue cooking for 5-6 minutes more, or until the blackberries are very soft.

To serve, divide the fruit evenly between 4 bowls and spoon a little syrup over each serving.

Makes 4 servings.
