Jerk Seasoning and Rub (Jamaican)
Bring some tropical flavours to the dinner table with this simple Jamaican jerk seasoning. This is a blend of sweet tropical spices and one or two savoury herbs coupled with a pleasing, peppery heat. Perfect for chicken, shrimp, beef or even vegetables. And by making our own jerk seasoning, you are avoiding any unhealthy additives like MSG or anti-caking agents that can sometimes be found in store-bought spice blends.
2 Tbsp. coconut sugar or brown sugar
1 Tbsp. dried thyme leaves
1 Tbsp. ground allspice
1 tsp. kosher or sea salt
1 tsp. black pepper, freshly ground
1 Tbsp. garlic powder
1 tsp. ground cinnamon
¼ tsp. cayenne, for mild spice; up to ½-1 tsp. for a spicier version
Stir together all ingredients.
Store in an airtight container for up to 1 year.
Makes roughly ½ cup or 4 servings.
Cook's Notes: Don't be afraid to use this seasoning aggressively. I advise using 2-3 Tbsp. per pound of chicken, shrimp or steak.
Marinade: Turn this into a marinade by combining seasoning with 1 Tbsp. olive oil and 1 Tbsp. lime juice. Use on 1 lb of chicken breasts.
