Apple Salsa (Cosmic Crisp)

Feeling snackish? This Apple Salsa is a little bit of sweet and a little bit of spicy and features delicious Cosmic Crisp Apples. The apples are a cross between the 'Enterprise' and 'Honeycrisp'. Cosmic Crisp apples are sweet, large and juicy with a firm and crisp texture.

2 cups Cosmic Crisp apples, diced and peeled (~ ¾ lb)
½ cup red or yellow bell pepper, diced
⅓ cup lime juice, freshly squeezed
¼ cup red onion, diced
¼ cup fresh cilantro, minced
1 Tbsp. pure honey
¼ tsp. sea salt
¼ tsp. black pepper, freshly ground
1 jalapeño pepper, seeded and minced

Combine all ingredients, stirring well. Serve with tortilla chips, pork, or roast chicken.
