Tartar Sauce (Irish)

irish-tartarsauceSimple tartar sauce for seafood. It is better if prepared several hours before you will be using it, but it can be used immediately.

1 cup mayonnaise (240 mL)
1 tsp. Dijon mustard
3-4 cornichons, minced
2 Tbsp. capers, drained and minced
3-4 chives, snipped into small pieces
2-3 sprigs fresh parsley, trimmed and minced
1 Tbsp. lemon juice, freshly squeezed

Put the mayonnaise into a small bowl, then stir in the remaining ingredients, mixing well.

Makes about 1½ cups (360 mL).
