Baked Brie with Grapes and Honey Walnuts

Minimal effort, simple and delicious ingredients like creamy smooth brie, sweet roasted grapes with honey and walnut pieces. I like to think this one is sneaky sophistication. And, according to the Spanish; eating 12 grapes at New Years (one for each stroke of the clock) will bring good luck throughout the year. Could this be any more perfect?

1 lb red or black seedless grapes, washed (500 g)
1 Tbsp. olive oil
1 (12 oz) wheel Brie cheese (340 g)
1 Tbsp. pure honey
2 Tbsp. walnut pieces

Preheat oven to 350°F (180°C/160°C fan, Gas Mark 4). Line two separate baking sheets with parchment paper.

Place washed grapes on one sheet and drizzle with olive oil and place in the oven to bake. You can leave the grapes attached or removed, your preference.

Place brie wheel on the other baking sheet and place in the oven.

Remove both baking sheets when grapes start to blister and when the brie is puffed (it may start to seep a bit as well) roughly 10-15 minutes for both depending on size.

Transfer brie carefully using a large spatula to a serving plate, placing grapes on top, and drizzle with honey and top with walnut pieces.

Serve with crackers or fresh crusty baguette.

Do you take the rind off of brie cheese before baking or eating it? No. The rind is completely edible, though it is preference and some choose only to scrape the creamy insides out to enjoy. Go ahead and try it first and decide for yourself.

How long to bake brie? It depends on the size of the wheel, some come quite small to pretty large. Mine was an average large wheel of brie and it baked for roughly 10 minutes and was puffing on top and starting to ooze cheese a bit before I pulled it out. You don’t want it completely melted and the cheese completely seeped out of the rind though.

What to serve with Baked Brie? Aside from what you choose to bake on top of brie, there’s the best part, what vessel you choose to enjoy it on top of. I personally love serving Baked Brie with a crusty bread like a baguette, sliced into rounds. You could also serve it with crackers.

Brie wine pairing - which wine goes best? Soft and fruity wines come recommended like a nice Pinot Noir or Beaujolais.
