Ham and Cheese Egg Muffins

cooking spray or butter
10 eggs
½ cup heavy cream
½ tsp. sea salt
¼ tsp. black pepper, freshly ground
1½ cups cooked ham, diced
¼ cup green onions, finely sliced
1 cup extra-sharp cheddar cheese, freshly shredded

Preheat the oven to 375°F (190°C/170°C fan, Gas Mark 5). Lightly spray or butter a 12-cup muffin tin.

In a large bowl, whisk the eggs, cream, salt and pepper. Add the ham, green onions and cheddar; mix to combine.

Fill the muffin cups almost to the rim with the egg/ham mixture. Bake in a preheated oven for about 10-12 minutes or until an inserted knife comes out clean.

Makes 6 servings.
