Overnight Omelet (PEI)
Prince Edward Island (PEI) is a fisherman's village where the men get up very early. Given the long day, the wives ensure their husband's bellies are full with this nutritious dish that is prepared the night before and cooked in the morning while their hubbies sleep.
12 eggs
1 cup sour cream
1 cup milk
2 cups cheddar cheese, shredded
1 can mushrooms, sliced
1 large onion
2 cups meat, such as; cooked ham, bacon or sausage, diced
sea salt
black pepper, freshly ground
parsley or basil, for flavouring
Preheat oven to 350°F (180°C/160°C fan, Gas Mark 4). Butter a 9x13” glass pan.
Beat eggs, sour cream, milk and seasonings.
Layer remaining ingredients.
Pour the egg mixture over, cover and refrigerate overnight.
Bake for 60 minutes.
Serve with toast and juice.
