Spinach and Cheese Omelette (Baked)

Tired of the same old omelette? Upgrade your breakfast by baking your omelette instead of cooking it in a skillet.
½ cup spinach, raw, chopped
1 Tbsp. onions, minced
2-3 eggs
2 Tbsp. plain yogurt
½ tsp. tarragon
dash hot pepper sauce
1/3 cup cheese, such as; Cheddar, Swiss, Monterey Jack or Pepper Jack)
Preheat oven to 350°F (180°C/160°C fan, Gas Mark 4).
Add spinach and onion to a well-greased 8" cast-iron skillet (or round glass baking dish). In a small mixing bowl, whisk together eggs, yogurt, tarragon, and hot sauce.
Pour mixture over the spinach and onion. Grate cheese and sprinkle over top of eggs.
Bake for 15 minutes just until done.
Makes 2 servings.
