Lemon Cream Pie Bars (Lazy Day)
Bright, creamy and refreshingly simple.
Crust:
1 cup graham cracker crumbs or almond flour
¼ cup sugar
½ cup butter, melted
Cream Cheese Layer:
8 oz cream cheese, softened
½ cup confectioners’ sugar
1 cup whipped topping
Lemon Layer:
2 cups lemon pie filling
Topping:
whipped cream
lemon slices
confectioners’ sugar
Preheat your oven to 350°F (180°C/160°C fan, Gas Mark 4). Grease a 9x9" baking dish.
Prepare the Crust:
In a bowl, mix the graham cracker crumbs, sugar and butter until well combined. Press the mixture into the bottom of the prepared baking dish to form an even crust.
Make the Cream Cheese Layer:
In a separate bowl, beat the cream cheese and confectioners’ sugar until smooth.
Fold in the whipped topping until fully incorporated. Spread this mixture over the crust evenly.
Add the Lemon Layer:
Pour the lemon pie filling over the cream cheese layer and spread it out evenly.
Bake:
Bake in the preheated oven for 25-30 minutes, or until the edges are set and the center is slightly jiggly. Remove from the oven and let it cool to room temperature.
Chill and Serve:
Refrigerate the lemon cream pie bars for at least 2 hours to set. Cut into squares, top with whipped cream, lemon slices and a dusting of confectioners’ sugar.
Makes 9 bars.
