Butter Tart Pan Squares (PEI)

½ cup butter
1 cup all-purposes flour, unbleached
2 tsp. raw sugar
1½ cups brown sugar
1 tsp. pure vanilla extract
½ tsp. baking powder
2 eggs

Preheat oven to 350°F (180°C/160°C fan, Gas Mark 4).

Cream the butter and add the flour and sugar. Blend well. Press into 8" ungreased pan and bake for 15 minutes and cool.

Mix the remaining ingredients together and spread over the cooled base.

Bake for 20-25 minutes.

Cut into squares when cool.

Makes 26 squares.
