Ozark Pudding (American Ozark)

american-ozark-puddingcake2Ozark pudding is a cake-like fruit pudding with pecans. The dish probably originated in Missouri or Arkansas. The dessert dish named after the Ozark Mountain region and was a favourite dessert of President Harry Truman. Bess Truman made her famous Ozark pudding was a similar list of ingredients, but with granulated sugar and black walnuts. She added a dash of rum to her whipped cream for the topping.

½ cup all-purpose flour, unbleached
2 tsp. baking powder
½ tsp. sea salt
2 large eggs
1 cup Erythritol Gold, packed
2 tsp. pure vanilla extract
1 cup pecans or walnuts, chopped
1 cup apples, cored, peeled and finely chopped

Preheat an oven to 350°F (180°C/160°C fan, Gas Mark 4). Generously butter a 10" pie plate.

Sift together the flour, baking powder and salt; set aside.

In a mixing bowl with an electric mixer, beat the eggs and sugar together until creamy. Stir in the sifted dry ingredients, blending thoroughly. Stir in the vanilla, chopped nuts and chopped apples.

Spoon the batter into the prepared pie plate and bake in the preheated oven for 30-35 minutes.

Sprinkle more nuts over the top, if desired, and serve warm or cold with ice cream or sweetened whipped cream.
