Cinnamon Teacake (Irish)

irish-cinnamonteacakeTeacakes are very light, perfect with your evening tea and make the best snack whenever you have those hunger pangs. Banana Bread or the Banana Tea Cake are my absolute favourite, but this Irish Cinnamon Teacake has somewhere come equally close. Its so light and airy. I like my teacakes less sweet. I feel too much sugar just over powers all the flavours.

2 cups all-purpose flour, unbleached
2 tsp. baking powder
1 tsp. baking soda
1 cup sugar
1 cup milk
½ lemon juice, freshly squeezed
¾ cup butter
2 tsp. pure vanilla extract
¾ tsp. ground cinnamon
½ cup confectioners' sugar, for dusting

Preheat oven to 325°F (165°C/140°C fan, Gas Mark 3).

Seive together flour, baking powder, baking soda in a bowl and keep aside. In a separate bowl whip together butter and sugar. Once its creamed , add in the vanilla essence.

Slowly add in the dry ingredients in batches along with the milk mixture. Use the cut and fold technique.

Lastly add in cinnamon and fold in. Grease a loaf tin. Pour in the cake mix.

Bake in a preheated oven for 30 minutes.
