Cashew Cayenne Brittle
Nutty brittle style candy for spice lovers with a sweet tooth.
2 cups whole salted cashews
10 Tbsp. (1¼ sticks) unsalted butter
½ cup sugar
¼ cup golden brown sugar, packed
1 Tbsp. light corn syrup
1 tsp. cayenne pepper
¼ tsp. sea salt
Butter a nonstick baking sheet.
Combine all ingredients in large nonstick skillet. Stir over low heat until butter melts and sugars dissolve. Increase heat to medium and boil, stirring constantly until mixture turns golden brown, thickens and begins to mass together, about 5 minutes.
Immediately pour out onto prepared baking sheet, spreading evenly. Cool completely. Break into pieces.
Makes 1⅓ lbs.
