Pecan Frosting
Pairs with any cake or cupcake, but is exceptionally good for Carrot Cake or Chocolate Cake.
1 (8 oz) pkg cream cheese
½ cup butter, softened
1 tsp. pure vanilla extract
3¾ cups confectioners' sugar
1 cup pecans, finely chopped
In a large bowl, beat cream cheese, butter and vanilla until blended. Gradually beat in confectioners’ sugar until smooth. Stir in pecans.
Makes enough for a double layer cake.
