Maple Fudge with Bacon

maplebaconfudgeMaple and bacon are a perfect marriage of Sweet and Salty. This tasty treat combines two of the best foods on the planet into one delicious delicacy. Great for gift giving, parties and special occasions.

1 cup 35% whipping cream (250 mL)
1 cup pure maple syrup (250 mL)
1 cup sugar (250 mL)
¼ cup butter (60 mL)
6 slices maple wood bacon, diced

Line an 8" (20 cm) square pan with parchment paper, allowing for overhang on sides.

In a large skillet, cook the bacon until crispy, drain on paper towels and set aside to cool.

In medium saucepan combine cream, maple syrup, sugar and butter over high heat, stirring to combine as they dissolve. Once mixture starts boiling, stop stirring. Continue boiling about 10-15 minutes, until temperature reaches 235°F (113°C) on candy thermometer.

Remove from heat and cool 15-20 minutes. Once cooled, beat mixture vigorously with a wooden spoon about 5 minutes, until mixture thickens, loses its shine and holds its shape softly.

Stir in bacon. Scrape into prepared pan and cool completely, about 2 hours.

Slice into 25 pieces.
