Cranberry Applesauce

cranberryapplesauceThis bright reddish-pink applesauce is simple enough for a weeknight supper and festive enough for special occasions. It's a favourite with my family and friends and looks fabulous at a Christmas dinner.

3 lb apples, cut into ½" slices, such as Gala, Golden Delicious and/or McIntosh
1 cup fresh or frozen cranberries
1 stick cinnamon
2-4 Tbsp. sugar
¾ cup water
2 tsp. lemon juice, freshly squeezed

In a large saucepan, combine apples, cranberries, cinnamon stick, sugar and water, bring to a boil.

Reduce heat, cover and simmer, stirring occasionally, until apples are tender, 30-35 minutes. (If sauce begins to stick to the bottom of the pan, add 2-4 Tbsp. more water.)

Remove from heat, discard cinnamon stick. Stir in lemon juice.

Makes 4 servings.
