Candied Kiwi Slices

candiedkiwislicesCandied kiwi slices are an unusual treat and so delicious. Homemade candied kiwi slices are just as easy to make as candied orange slices.

3 kiwi
1 cup granulated sugar (200 g)
½ cup water (100 mL)

Cut Kiwi:
Wash and peel the kiwi. Slice kiwi into thin slices, about ¼″ (½cm) thick.

Make the Syrup:
In a saucepan, combine sugar and water and bring it to a boil. Reduce the heat and continue to simmer the syrup until the sugar is dissolved.

Add Kiwi Slices:
Now add the kiwi slices. Cook covered for about 1 hour. Check often in the last 15 minutes as the syrup starts to foam. Add more water if necessary.

Why Are Candied Kiwi Slices Yellow?
During the cooking process, the kiwi slices turn translucent and yellowish as the heat destroys the green color of the kiwi. If you buy green candied kiwi at the store, they have no doubt been dyed with artificial food coloring.

Dry Candied Kiwi Slices:
Remove the candied kiwi slices from the syrup with a fork. Transfer them to a baking sheet lined with baking paper. Let the DIY candied kiwi dry for a couple of days at room temperature.

Kiwi Syrup:
The leftover kiwi syrup is sweet but doesn’t taste of kiwi. So you can use the kiwi syrup instead of sugar for other recipes.

Store Candied Kiwi Slices:
Store homemade candied kiwi slices in an airtight glass jar in the fridge.
