Cardamom Roasted Nectarines

cardamomroastednectarinesvanillacoconutyogurtThe fruit must be quite ripe or the cooking time will increase to up to an hour to allow the fruit to soften. You will need to cover after half an hour to prevent the honey from burning.

6 ripe Nectarines, halved and stones removed
½ tsp. mixed spice
2 tsp. cardamom
1 Tbsp. lemon juice, freshly squeezed
4 Tbsp. pure honey
1 vanilla pod, split and seeds scraped

Garnish:
coconut yogurt
chopped pistachios

Preheat oven to 400°F (200°C).

Place fruit on a lined baking dish, cut side up.

In a small bowl, combine mixed spice, cinnamon, lemon juice, honey and vanilla seeds.

Drizzle half the mixture over the fruit and bake for 15 minutes.

Remove from oven, drizzle with remaining mix and bake for a further 10 minutes.

Reserve any roasting juices.

To serve, cool slightly and place on serving plates.

Drizzle with honey mix and a dollop of coconut yogurt. Sprinkle with chopped pistachios.
