Plum Cobbler (Nova Scotia)

1 Tbsp. brown sugar
2 Tbsp. cornstarch
1 cup water
4-6 cups plums, pitted and cut in quarters.
1 tsp. grated orange zest
1/8 tsp. almond extract

For the topping:
1 cup flour, unbleached
3 Tbsp. raw sugar
½ tsp. sea salt
2 tsp. baking powder
1/3 cups oats
5 Tbsp. butter, chilled and cubed
½ cup milk

Preheat the oven to 350°F (180°C). Grease a 10x10” casserole dish or pan.

In a saucepan mix together sugar, water and plums over moderate heat until thickened, about 5 minutes. Remove from heat. Add orange zest, almond extract and pour into prepared casserole dish.

Sift together flour, sugar, salt and baking powder in a large bowl. Stir in oats. Cut in butter until crumbly and then add in milk. Mix well.

Spoon this soft dough over the cooked plum mixture. Sprinkle additional sugar on top.

Bake for approximately 25 minutes until top is slightly browned and plums are bubbling.

Delicious warm or cold, with or without ice cream.
