Buffalo Burger (Manitoba Prairie Fire Burger)
Although lacking in fruit-based helmets, Manitoba more than makes up for that with its plethora of bison. So much so that there is an actual Manitoba Bison Association, and they have a killer Prairie Fire Buffalo Burger recipe that will bring the heat to any party.
Buffalo Burger:
1½ lbs bison ground
½ cup onion, finely chopped
1 medium jalapeño, finely chopped
½ cup rolled oats
1 egg
1 tsp. sea salt
1 tsp. black pepper, freshly ground
Garnish:
hot chili sauce
selection of your favourite grilling vegetables, such as; Portobella mushrooms, sweet peppers or red onion
Mix all ingredients together except chili sauce and vegetable. Shape into patties about ½ inch thick.
Grill: Grill patties about 4" from coals, turning once, until they are done to your taste (4-5 minutes on each side for medium). Serve with hot chili sauce.
Broil: Set oven control to broil. Place patties on rack in the broiler pan. Broil with the tops about 3" below the heat, turning once, until done (Broil 4-5 minutes for medium).
Serve on fresh toasted buns with your choice of toppings.
