Bison Meatballs (Native American Boulettes or Bullets )
Compliments of the Chippewa tribe. Traditionally served with boiled potatoes and gullet.
2 lbs ground bison
½ cup onion, chopped
1 cup all-purpose flour, unbleached
1 tsp. sea salt
¼ tsp. black pepper, freshly ground
Mix ground bison and onion. Add remaining ingredients. Shape into balls about 1½" in diameter. Roll balls lightly in flour.
Bring a large pot of water to a boil. Drop the balls into the water.
Cook about 25-30 minutes or until there is no pink in the middle of the balls.
Makes 30 balls.
