Sausage Roll (Greek Loukanikopita)
Loukanikopita (Sausage roll) is a classic Greek breakfast pastry wonderfully accompanied with a cup of Greek coffee. Mouthwatering hot dog sausages nestled in flaky puff pastry. Delicious when eaten when hot out of the oven. Needless to say, they are perfect for those unexpected guests, packed lunches and picnics. The secret to making this extra flaky homemade Loukanikopita is butter. Simply brush the puff pastry with a little bit of butter before putting the sausage rolls in the oven.
5-10 hot dog sausages
puff pastry
cheese (optional)

Preheat oven to 350°F (180°C/160°C fan, Gas Mark 4).
Roll the puff pastry and cut into equal sizes. Places the sausage onto the puff pastry and make sure you leave enough space to cover the sausage.
A single sheet of puff pastry will accommodate 5 hot dog sausages. You can cut both pastry sheet and sausages into smaller portions to make mini-Loukanikopita.
If you are adding cheese to your homemade Loukanikopita, place it between the puff pastry and the sausage encircling the sausage.
Dub a little bit of water at the edges of the pastry so that it seals and brush with a little bit of butter for that extra flakiness.
Place the Loukanikopita (sausage roll) in a parchment/bakery paper-lined baking tray and bake for approximately 20 minutes or until golden brown.
Makes 5 servings.
Cook's Notes: I don't eat hot dogs so I've used various European sausages instead. But, because the pastry requires only 20 minutes of cooking time a thicker sausage may not be fully cooked. To compensate, I boil the sausage for 10 minutes before rolling in pastry and baking.
