Chocolate Fudge Squares (Almond and Coconut Flour with Protein)

Base:
1⅓ cup oat flour
½ cup almond flour
¼ cup coconut flour
1 cup chocolate whey protein powder
⅓ cup Dutch processed dark cocoa powder, sifted
½ cup pure honey, agave or pure maple syrup
½ cup almond nut butter
¼ cup unsweetened dark chocolate, melted
2 Tbsp. coconut oil
1 tsp. vanilla bean paste

Chocolate Ganache Layer:
½ cup unsweetened dark chocolate, chopped
1 Tbsp. coconut oil

Mix all dry ingredients in a large mixing bowl and set aside.

In a small saucepan combine sweetener, nut butter, extracts, and oil until fully combined, if using flavourings or stevia drops add those into this mixture. Add in melted chocolate (or melt chocolate in the same pan at the end) and set aside.

Pour sweetener/butter mixture over our dry ingredients and stir thoroughly, if your dough is too dry - add a few spoons of almond milk until it comes together.

Press dough into an 8x8" pan lined with foil or plastic wrap.

Set in fridge for 15 minutes before adding ganache.

To make ganache, melt chocolate in the microwave with the coconut oil - spread over bars and top with sprinkles if desired.

Allow to set in the fridge until chocolate is firm to the touch - slice into 16 bars and serve.

Keep leftovers in the fridge for 5-7 days.

Makes 16 squares.
