Chocolate Peanut Butter and Jelly Cups (Protein)
These easy protein peanut butter cups are the perfect midday treat. Rich chocolate with a creamy peanut butter center, they taste so good you won't even be able to tell these are packed with protein.
⅓ cup natural peanut butter
2 scoops chocolate whey protein powder (39 g)
1 Tbsp. coconut oil
1 cup dark chocolate chips
⅓ cup sugar-free strawberry jelly
Place 12 muffin liners in a muffin tin and spray with cooking spray.
Heat chocolate chips and coconut oil in the microwave for about 2 minutes, stirring every 30 seconds. Mix well until the chocolate is melted.
Scoop a spoonful of melted chocolate into the bottom of each muffin liner, then use a spoon to press the chocolate up the sides for full coverage. Save the remaining chocolate for later.
Freeze the muffin tin for 10-15 minutes, until chocolate is hard.
In another bowl, mix the peanut butter and protein powder until the thick and fully-combined.
Use your hands to make 12 balls with the peanut butter mixture.
Remove the muffin tin from the freezer and add one peanut butter ball on top of each piece of frozen chocolate in the tin. Use your finger to press the peanut butter ball until it’s smooth across the chocolate.
Add a spoonful of jelly on top of the layer of peanut butter and place back in the freezer until firm.
Remove the muffin tin from freezer, top each one with a spoonful of chocolate and place back in the freezer for 10-15 minutes, or until the chocolate is solid.
Remove from freezer and treat yourself.
